Steamed Egg with Clams
1. 12 clams
2. 2 eggs
3. 3 ginger slices
4. 20ml cooking wine
5. 1g scallions, chopped
6. 2g salt
7. 10ml light soy sauce
STEPS
1. Clean Clams
● Soak clams in salted water to remove sand. Rinse thoroughly.
2. Steam Clams
● In a pot with half water, add salt, ginger, and clams.
● Steam for 3 minutes until shells open.
3. Prepare Egg Mixture
● Add a pinch of salt and mix gently.
4. Assemble & Steam
● Pour egg mixture through a sieve over clams.
● Cover with foil. Pure-steam at 100°C for 10 minutes until set.
5. Garnish
● Drizzle with light soy sauce and sprinkle scallions. Serve warm.
