Black Sesame Euro Bread

INGREDIENTS (10 pieces)

1. 280g high-gluten flour

2. 20g unsalted butter 

3. 4g instant yeast 

4. 4g salt

5. 15g sugar

6. 170ml water 

7. 2g black sesame seeds 

8. 1 large egg + 1 large egg yolk


STEPS

1. Mix Dough

    ● Combine all ingredients except black sesame and eggs in a bowl.

    ● Knead into a smooth dough, shape into a round ball, and let it rise covered with a damp cloth for 50 minutes.


2. Shape & Rest

    ● Divide the dough into 10 equal portions.

    ● Roll each piece into a tear-drop shape, let rest covered for 10 minutes.

    ● Flatten into a 25cm tear-drop shape and roll up from the tail end.


3. Final Rise & Preheat

    ● Cover the rolls and let them rise for 40 minutes.

    ● Preheat the oven to 200°C for 10 minutes.


4. Bake

    ● Brush the surface with egg wash, sprinkle black sesame seeds.

    ● Bake at 200°C for 23 minutes using the Bake function.
